Picanha is the most noble part of a brazilian BBQ! It´s tender and if corrected grilled is delicious.
My father did this: sliced in nice pieces without that the fat layer, even if you may not eat that it´s is important to grilled. The only season is sea salt little crystals. The meat is so taste I consider a sin to put any kind of sauce on top of it. The side dish are cooked cassava.
The Picanha comes from the most exclusive area that americans says is the tender loin. It has to have the layer fat. This sympatic cow is from Service of Information of Meat - Brazilian Branch, original a french idea for supplies information about meat. I don´t agree with everything they say there, but still it is more sustentable and healthier to have a small taste slice of picanha than a hamburger or a sausage.
